Pro Tips
- Our house Daiquiri is 2:1:¾ (rum:lime:syrup) — the Modern Sour template, Death & Co lineage. Drier palates run 2:¾:¾ (Dry Sour, Milk & Honey lineage). Havana bartenders argued over quarter-ounces.
- White rum for the classic; aged rum makes it a different drink entirely.
- Shake until the shaker is painful to hold — then 5 seconds more.
