Canchanchara
Modern · Rum · Rocks glass
An IBA official cocktail from Trinidad, Cuba, dating to the 19th-century Cuban Wars of Independence, when mambises (guerrilla fighters) drank it as a restorative in the mountains. Aguardiente, honey, and lime remain the immutable trinity, whisked together for a rustic, tart-sweet sipper.
