Ingredients
- Japanese Whisky (Hibiki/Toki)1.5 oz
- Premium Soda Water4.5 oz
- Carved Ice Spear1 piece
- Lemon Peel1 twist
Method
- Chill collins glass in freezer 5 minutes
- Place a long carved ice spear in glass
- Pour whisky over the ice and stir 13 times with bar spoon
- Slowly top with very cold soda, pouring down the spear
- Stir once more, garnish with lemon peel expressed over
Pro Tips
- Pre-chill everything — the glass, the whisky bottle, the soda. Warm soda collapses the bubbles instantly.
- Japanese bar culture says exactly 13 stirs — an odd number for asymmetric crystal formation. Yes, really.
- Hakushu for peat-soft, Hibiki for honeyed-rich, Toki for daily drinkers.
