Ingredients
- Absinthe25 ml
- Fresh Lemon Juice25 ml
- Water25 ml
- Rich Simple Syrup20 ml
- Aromatic bitters1 dash
- Egg white (pasteurised)15 ml
Method
- Dry-shake absinthe, fresh lemon juice, water, rich simple syrup, aromatic bitters, and egg white (pasteurised) in shaker (no ice)
- Add ice and shake hard again
- Double strain into chilled coupe glass
