From Modern American Drinks by George J. Kappeler (1900). Original recipe: "A GOOD APPETIZER. Mixing-glass half-full fine ice, three dashes pepsin bitters, one jigger Tom gin. Mix and strain into cocktail-glass. Add a piece of twisted lemon-peel."

Ingredients
- pepsin bitters3 dashes
- Old Tom Gin2 oz
- twisted lemon-peel1 piece
Method
- Add pepsin bitters and old tom gin to mixing glass with ice
- Stir until well chilled
- Double strain into chilled coupe glass
- Garnish with twisted lemon-peel
